Spring Onion Pancake




INGREDIENTS
1 1/2 cupsAll Purpose Flour
1/2 cupWater (warm)
Vegetable Oil (use for frying)
1/2 tspSalt
2 stalksScallions (chopped thin)


PREPARATION
In a large bowl add flour and water mixing well. Knead dough until smooth and elastic. Cover container and let dough rest 30 min.
Split dough in two. On a floured surface roll out 1st dough into a large square. Coat with oil. Sprinkle salt evenly. Spread scallion. Roll up tight like a 1 ½ â?? diameter log.
Cut 2 inch pieces and squeeze end to end. Roll out a 3 inch circle. Set aside on a floured plate. Repeat with 2nd dough.
Spread oil in a frying pan and fry 4 at a time. Flip over when hot side is lightly brown.
Remove onto paper towel lined plate.


Cooking Tips: Makes 16 pancakes.
Serving Tips: Serve plain or with jelly or BBQ sauce.
