INGREDIENTS
15 ozBlack or Red Eye Peas
1 smallOnion finely diced
1Red Bell Pepper finely diced
3 tbspOlive Oil
1 tspMinced Garlic
1/2 tspSalt to taste
1/8 tspBlack pepper to taste
1 tspParsley flakes
1 tspApple cider vinegar


PREPARATION
In a non stick frying pan saute onions and red pepper in olive oil until they are soft.
Add garlic, vinegar, salt, pepper, and parsley. Stir and cook on low heat for 5 min
Add peas and cook 5 min.


Cooking Tips: Cook longer to soften the peas as desired.
Serving Tips: Can be served at room temperature or warm.
