Corn Beef and Cabbage




INGREDIENTS
1Corn Beef Brisket
1 smallCabbage quartered
8Peppercorns
6Garlic cloves
1Parsnip diced into 1 inch by 1 inch cuber
1Turnip diced into 1 inch by 1 inch cuber
2Bay leaves
1 lbCarrots pealed and cubed
2 LPotatoes cubed
1/4 tspBlack pepper
1/2 tspSalt


PREPARATION
Wash brisket. Make small X slits in the meat and insert garlic and cloves pieces.
Place the meat into a stockpot (at least 8 quarts). Cover the meat with water. Add bay leaves, and peppercorns, 2 carrots. Bring to a boil, skim off foam and reduce heat to a simmer.
Simmer 2-3 hours, or until meat is nearly tender.
Meanwhile, prepare vegetables.
During last half hour, add remaining vegetables and cook until tender. Add salt and pepper to taste.
Drain and serve
